Animal welfare is one of the most important parameters to take into account in the food industry, where it is most relevant in the meat sector. This fact is due to the controversy given in the process in animal slaughtering, because consumers ask for a stunning system in order to alleviate animal suffering. On the other hand, there are consumer groups where they are subject to different cultural laws, so that by law they are prohibited from using a stunning system during the slaughter of the animal. Under European Union (EU) law, pre-slaughter stunning is required for all farm animals intended for human consumption, but an exception is granted for religious slaughter. As a main point, this study aims to evaluate the knowledge, perceptions and opinion of citizens about the different slaughter methods applied in slaughterhouses in Spain and the European Union. On the other hand, the project also wants to establish a foundation in relation to animal welfare and the organisms that regulate it, in addition to synthesizing the different laws in relation to animal welfare and establishing the differences between the different current slaughter systems.
El bienestar animal es uno de los parámetros a tener en cuenta en la industria alimentaria, donde tiene más relevancia en el sector cárnico. Este hecho es debido a la controversia dada en el proceso de degüello del animal, debido a que los consumidores piden un sistema de aturdimiento con el fin de paliar el sufrimiento animal. Por otro lado, existen grupos de consumidores donde estos están sometidos a unas leyes culturales y religiosas diferentes, de manera que tienen prohibido el uso de un sistema de aturdimiento durante el degüello del animal. Según la legislación de la Unión Europea (UE), se exige el aturdimiento previo al degüello de todos los animales de granja destinados al consumo humano, pero se concede una excepción para el degüello religioso. Como punto principal, este estudio te como objetivo evaluar el conocimiento, las percepciones y la opinión de los ciudadanos cabe los diferentes métodos de degüello aplicados en los mataderos de España y la Unión Europea. Por otro lado, el proyecto también quiere establecer unas bases en relación en el bienestar animal y los organismos que lo regulan, además de sintetizar las diferentes leyes en relación al bienestar animal y establecer las diferencias entre los diferentes sistemas de degüello actuales.
